Crispy Innovation: Food Incubator’s Vegetable Chips Hit the University Cafeteria

Craving a healthy, crunchy snack between classes? Starting February 10, you can buy vegetable chips made at the SUA Food Incubator in the university Buffet under the auditorium. These chips are made using a special drying technology, which keeps them healthy, crispy, and full of natural flavour.
The first product available is carrot chips, marking the debut of the SUA Food Incubator’s offerings to the public. According to Dr. Kristína Predanócyová from the AgroBioTech SUA Research Centre, beetroot chips will be available by the end of February or early March, followed by parsley chips in mid-March. “We’re also working on introducing more of our own food products soon,” she added.
These vegetable chips come with detailed labels, including nutritional information. They are a healthier option compared to regular potato chips, containing less fat and more vitamins, minerals, and fiber. A 50-gram bag of carrot chips costs 2.70 €.
Engineer Dušan Straka explained that the chips are made using a unique method: “Instead of frying, we dry the vegetables, so they don’t come into contact with high heat or processed oils. We use extra virgin olive oil without heat treatment, and a special technique gives the chips their crispiness.”
The Regional Public Health Office in Nitra approved the SUA Food Incubator as a food production facility last year. It’s the first food incubator in Slovakia, serving not only as a place for food production but also as a training and development centre for students, aspiring entrepreneurs, and start-ups. The facility includes three specialized centres: a technological product development centre, a cereal product development centre, a beverage development centre.
